Vegan Burgers for Mayim Bialik?

Last night I attended an event where Mayim Bialik spoke to a roomful of people about her Jewish background, her path to show-business, and her path to becoming more religious.  A few hours before the event, I made a dinner of vegan veggie burgers for my kids.  We are not vegan but we like to eat lots of vegan food.  In typical Jewish mother fashion, it crossed my mind that Mayim is vegan and perhaps she will be hungry during her trip to New York City, as she sometimes comments on the lack of vegan food at events...  But don't worry, I DID NOT show up with a vegan burger on home-made bread for Ms. Mayim, lest she think I am crazy and trying to poison her.  BUT, during the event, my husband texted me.  He was putting the kids to sleep when I left and had not eaten dinner until after they were in their beds.  His text read "Veggie burgers really good!"  Hmmm...maybe I should have brought one to Mayim!

Recipe for Vegan Veggie Burgers (2 versions)

We had the millet/kasha one last night!

            


The bulk:
1 cup cooked quinoa + 1/4 cup cooked brown rice 
OR 1 cup toasted/cooked millet + 1/4 cup toasted/cooked buckwheat (kasha)  
1/2 cup raw or toasted wheat germ
1/2 cup raw or toasted hemp seeds
1/3 cup freshly ground flaxseeds

The spices:
1/4 teaspoon ground cumin 
1/2 teaspoon onion powder  
2 garlic cloves, minced
1 tablespoon Dijon mustard
salt and pepper to taste (try 1 tsp salt and 1/4 tsp pepper to start)


The texture:
1/4 cup pureed pumpkin
2 tablespoons freshly ground flax mixed with 6 tablespoons water until frothy (replicates eggs in 1:3 ratio)
1 cup cooked mashed white beans or use your favorite beans (I like Eden canned Canellini beans)


Mix all ingredients in a large bowl until well blended.
Can let stand for up to 20 min.

Heat a skillet with oil, don't be too skimpy. When oil is hot, drop by large spoonful and pat down.  Brown each patty for about 5 minutes on each side, until nicely browned/firm.  Makes 10-12 burgers.

Let cool for 5 minutes, they will firm up a bit.  Try with vegennaise or mayonnaise on your favorite bread.  Great the next day too!  (as evidenced by the picture)
