Pregnancy Super Breakfast

One of my first semesters teaching at Queens College - CUNY, a great and eclectic student used to routinely show up to class with breakfast in a small mason jar.  After a few weeks, he made it known that he cured himself of depression with a combination of mostly-raw whole foods nutrition and spirituality. He made for a very interesting class as we continuously delved into research, and questioned the quality of research, to ascertain whether certain nutrition practices (both mainstream and holistic) were rooted in science.  I always wish that I will have at least one student like him in my classes, who will constantly question mainstream nutrition, and encourage the class to think outside the box.  That is the "cereal box," of course. The inspiration for this amazing breakfast in a jar (or bowl!) comes from Michael, although I do not remember exactly what he puts in his.  Make it your own, there are no rules and no measurements! And by the way, my kids love it too. You can also shape them into cookies, just press together into desired shape (round or square), although you may need to add a few more dates or raisins if you intend to do that.

Pregnancy super nutrients: Zinc, Vitamin E, Iron, Magnesium, Manganese, Vitamin B1, Selenium, Protein, Folate, Healthy fats, and more! (also super nutrients for PCOS, fertility, Pre-conception, and Kids too!


In a food processor, pulse the following ingredients until the mixture comes together as a crumbly/chewy blend:


Toasted pumpkin and sunflower seeds (Any nut/seed works, raw seeds work too)
Dates, pits removed (Raisins work too)
Spoonful of virgin coconut oil
Chia seeds and Hemp seeds (optional)
Unsweetened coconut flakes
Raw honey
Vanilla extract (few drops) or vanilla bean powder
Sea salt (dash)

(Note: I like my seeds toasted, especially in the winter. But any raw seed or nut will work too. I am sure Michael only uses soaked/sprouted seeds or nuts, but this "recipe" will work with whatever you have! You can experiment by adding cinnamon, nutmeg, etc...)

By the way, this is especially nice when you just move in to a new place and your stove, oven, and fridge are not set up yet (or travelling in a hotel). As long as you have electricity for the food processor of course. Just use raw (untoasted) seeds if that is the case (or soaked if your heart desires).

  2. I would suggest the chia or hemp seeds are vital not optional. Nutritionist in London Yvonne Bishop-Weston says "essential omega 3 fats, especially EPA and DHA, are vital for optimal health"
